  2. You might need to go ahead and juice them before they go bad. Keep it in the frig and try to use it within the month.

    Brazilian Creamy Limeade(makes 12 cups)

    6 limes

    1-1/2 cups sugar

    1/2 cup and 1 tablespoon sweetened condensed milk

    9 cups water

    ice

    Wash limes thoroughly. Cut off the ends and slice into eight wedges. Place limes in a blender with the sugar, sweetened condensed milk, water, and ice.

    Blend in an electric blender, pulsing 5 times. Strain through a fine mesh strainer to remove rinds. Serve over ice.

    Lime Sherbet

    8 teaspoons finely grated lime rind

    2 cup sugar

    6 cups half-and-half

    1 cup fresh lime juice

    1 cup water

    1/4 teaspoon salt

    Directions

    In a large mixing bowl, stir the first 6 ingredients together until well blended.

    Pour mixture into the freezer container of a 4-quart ice cream maker; freeze according to the manufacturer's directions.

    INGREDIENTS:

    1 cup butter

    1 cup shortening

    2 cups white sugar

    5 eggs

    3 cups all-purpose flour

    1/2 teaspoon baking powder

    1/2 cup milk



    1 1/2 teaspoons vanilla extract

    1/2 cup key lime juice



    1/4 cup white sugar

    1/4 cup butter

    3 tablespoons key lime juice

    DIRECTIONS:

    1. Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.

    2. In a large bowl, beat 1 cup of butter, shortening and 2 cups of sugar until light and fluffy. Beat in the eggs, one at a time, blending each one thoroughly. Combine the flour and baking powder, stir into the batter alternating with the milk, vanilla and 1/2 cup of key lime juice. Pour into the prepared pan and smooth the top.

    3. Bake in the preheated oven until a knife inserted into the crown of the cake comes out clean, about 90 minutes.

    4. While the cake is baking, make the glaze in a small bowl. Stir together 1/4 cup sugar, 1/4 cup butter and key lime juice. When the cake is done, invert it onto a wire rack while still warm, but not straight out of the oven. Poke several times with a skewer or toothpick. Pour the glaze over the warm cake allowing it to seep into the holes. Allow the cake to cool completely before serving.

    INGREDIENTS:

    1 (18.25 ounce) package

    lemon cake mix

    1 1/3 cups vegetable oil

    4 eggs

    1 (3 ounce) package lime

    flavored gelatin mix

    3/4 cup orange juice





    1/2 cup butter

    1 (8 ounce) package cream

    cheese

    3 tablespoons fresh lime juice

    4 cups confectioners' sugar

    DIRECTIONS:

    1. Combine cake mix, gelatin mix, oil, eggs and orange juice. Pour into three 8 inch cake pans. Bake according to instructions on box. Allow to cool, then frost.

    2. To make the frosting: In a large bowl, beat the butter and cream cheese until light and fluffy. Add lime juice and confectioners sugar. Mix well.

    "My favorite dessert to make has to be cheesecakes. This is just one of many that gets lot of requests. It is sweet and tangy just like its more familiar cousin, the pie. I usually serve it with whipped cream and lime slices. Enjoy!"

    INGREDIENTS:

    1 1/2 cups graham cracker

    crumbs

    6 tablespoons butter, melted

    24 ounces cream cheese,

    softened



    1 cup white sugar

    1 tablespoon cornstarch

    3 eggs

    1 tablespoon grated lime zest

    2/3 cup key lime juice

    DIRECTIONS:

    1. Combine cookie or graham cracker crumbs with butter or margarine. Press into bottom and partially up sides of 9 inch springform pan. Refrigerate.

    2. In a large bowl, beat with an electric mixer the cream cheese, sugar, lime peel, and cornstarch until smooth and fluffy. Beat in eggs one at a time, blending just until smooth. Add key lime juice with mixer on low. Finish mixing by hand. Do not overbeat, or cake will crack during baking. Pour batter into prepared crust.

    3. Bake at 300 degrees F (150 degrees C) for 55 to 65 minutes, or until set. To minimize cracking, place a shallow pan half full of hot water on lower rack during baking.

    4. Turn oven off, and let cheesecake stand in oven 30 minutes with the door open at least 4 inches. Remove from oven. Refrigerate cake overnight, and up to three days.

  5. Key Lime Bars (substitute for the lemon in lemon bars) ... substitute them for ANYTHING with lemon in it (pies, cakes, cookies, scones);  squeeze some over fresh papaya

  6. You can always just juice them, and freeze them for later.

    Juice them, freeze the juice into ice cubes, pop and bag em, and use them when you need lime juice.

    Or you can buy tequila and coronas :) Don't forget to invite me over...lol
