  1. If you can't use it all chop it up and freeze it and use it

    that way.


  2. Combine 2 cups of basil, 2 cloves of garlic, and 1/4 cup pine nuts in a food processor and pulse until coarsely chopped. Add a 1/2 cup of extra virgin olive oil and process until fully incorporated and smooth. Season with salt and pepper.

    If freezing, transfer to an air-tight container and drizzle 2 tbsp oil over the top. Freeze for up to 3 months.

    Thaw and stir in 1/2 cup grated Pecorino cheese.

  3. My mother and her gardening friends make basil pesto. They use the pesto in pasta, on sandwiches, and in dips as well. From what they've told me it freezes well, so you can use it throughout the year.

  4. Sprinkle roughly chopped basil leaves over sliced tomatoes, then drizzle with red wine vinegar or balsamic vinegar.  

    Alternating the tomato slices with slices of fresh mozzarella makes it even more tasty, and pretty too.

  5. Robert S is right, I freeze my pesto in ice cube trays.  That way it's easier to defrost just what you need.
