  1. Ginger is ginger, either fresh or powdered, it imparts a wonderful taste & fragrance, there really is no substitute.


  2. You didn't say what you're making......Are you baking or cooking asian? If you're cooking with a wok... you can flavor your dish with other things... like garlic, black bean sauce ( spoon full... just stir it in), red or green curry sauce  ( hot and spicy, use carefully), fish sauce ( pour about 2 tsp into cooking veggies),  sesame oil ( add just a few minutes before removing wok from stove, stir in and simmer a few min. to let flavor  blend)

  3. I agree, there's no substitute for ginger, but once I used garam masala in an indian dish that called for ginger since the other flavors went well anyway. Didn't notice the absence of ginger...

  4. If you don't want to use it, just leave it out.
