  1. I would be careful using natural oils as they can spoil and become rancid. Definitely do not use olive oil. Most vegetable oils are not suitable for this purpose either.

    Likewise, I would choose carefully from commercial products to make sure that you're not using something toxic.

    Some people firmly maintain that only mineral oil should be used. This is the traditional finish for butcher blocks.

  3. Most all prepared solutions are simply the mineral oil that you can buy at a drugstore or grocery for 1/5 the price.   Mineral oil does not turn rancid and is easily renewed every year or so.  It is used as a medicine, so it is automatically food-grade.

    If you want more protection at 1 part paraffin wax to 7 parts mineral oil, heat it in a double boiler (it is flammable) until the wax melts.  Smear it on your butcher block and go away until the wax cools and becomes a solid again.  Take an old credit card or plastic putty knife and scrape off the excess.  Likewise, repeat this as needed.

    Do not use any vegetable oil as they will go rancid.    

    I would also not use linseed oil as it will cure and it tends to have an objectionable odor.

  4. Something non toxic like olive oil. It works great.  We are using it for our bamboo block.  

  5. Use any oil for food surfaces so as not to taint any food being prepaired any hardware store will have choise of oils

    Or there is a product called JE Moser's Butcher Block Oil that is specially made for butchers blocks and is FDA approved.  It is available at most woodworking stores, or might be special ordered at Ace and Do-It Best stores.
