What can i use instead of buttermilk?

ive been looking through a book of muffin recipes and every recipe has buttermilk in it

is there anything i can use instead?

  1. If you do not have any buttermilk, you can use equal parts of evaporated milk and whole milk and add a few tbsps lemon juice. It will curdle a little, that is normal.


  2. Make your own.  Use regular milk and add 1 teaspoon of vinegar (per cup I believe, but you may want to do a google search to be sure).  That's buttermilk!

  3. Ordinary milk will do just as well and is a little bit healthier. I use low fat milk.

  4. You add one tablespoon of vinegar or lemon juice to a cup of regular milk and let it sit for 5 minutes.  Don't use regular milk without doing this, the recipe has baking soda in it which is activated by the acid in the buttermilk or the vinegar.  Without the acid your muffins won't rise properly.

  5. one cup of milk + 1 tbl spoon of vinegar = buttermilk :)
