Question:

What can i use instead of walnuts in this cake recipe ?

I'm trying to make a coffee cake but my dad is allergic to nuts and all the recipes i can find have walnuts in them including this one :

I'm no expert cook (and this question is directed to all the cooks out there) so i need to know what i can replace the walnuts with that will be suitable or if , indeed, they need replacing at all , if they can just be left out ?I'm sure it's an easy enough question for anyone who makes cakes ... but not for me lol !

  2. OMG that cake looks good, I have to try it. You can certainly leave the nuts and/or substitute chocolate chips.  Chocolate would be great in this recipe.

  3. You don't have to use the nuts. People just choose to add them because of the taste and crunchiness. Why don't you substitute them with chocolate chips or even raisins. You know, they have different flavors of chip pieces, like peanut butter, or butterscotch. Of course, don't use the peanut butter chips.   Good luck, be creative!!!

  4. Cranraisins (dried cranberries) or raisins, or nothing!  

  5. it says on the recipe that they're optional. that means you don't need them.

  6. Leave them out, or be a little daring and use chopped dried cherries or dates, chocolate or other flavored chips.  

  7. Just leave them out, your recipe will still be delicious.

  8. I'm not sure what to tell you on that one.  What about grinding oats???

  9. Just leave them out.  Your cake will be fine.

    Here's one I've made that we like.  I've made it with and without the pecans.  I've made it with pears instead of apples.

    Apple Coffee Cake presented by The Ponderosa Lodge



    1-1/2 cups all-purpose flour

    1 cup granulated sugar

    1 teaspoon baking powder

    1/2 teaspoon salt

    1/4 cup (1/2 stick) butter, melted

    1 egg

    3/4 cup milk

    3 medium apples, peeled, cored, and coarsely chopped

    1/4 cup packed light brown sugar

    1/2 cup chopped pecans

    1 teaspoon ground cinnamon

    Preheat the oven to 350°F. Coat an 8-inch square cake pan with nonstick cooking spray.

    In a medium bowl, beat the flour, granulated sugar, baking powder and salt. In a large bowl, cream the butter and egg until light, then stir in the milk. Add the flour mixture to the butter mixture and mix with a few light strokes just until the dry ingredients are moistened. Do not over mix --think muffin batter. Stir in the apples. Spread the batter into the cake pan.

    In a small bowl, combine the remaining ingredients; mix well and sprinkle evenly over the batter. If you don't like it very sweet, use half of the topping and save the rest for the next batch. Bake for 50 to 55 minutes, or until a wooden toothpick inserted in the center comes out clean.

    Serve warm, or allow to cool, and cover until ready to serve.

    *Sorry I don't have a conversion chart but I'm posting it anyway because coffee cake recipes are simple.  As long as you don't change basic proportions of vital ingretdients in the recipe you can pretty much make it however you want.
