What can i use to substitute mirin in a japanese dish?

i cant use wine or any alcohol in my food at all.

I was thinking of making a chicken soboro rice bowl...

pls help!!!!

  1. A blog on finding a substitute for mirin suggests the following non-alcoholic substitute:

    1 tbsp of vinegar and one of sugar (dissolved in the vinegar) for 2 cups of sushi rice.

    Another site recommends apple juice, but this does not seem to be as effective.


  2. Try plain rice vinegar, add a bit of sugar, and a bit of apple juice to taste.  It should come close to mirin.

  3. Substitutes:

    1 tablespoon dry sherry + ½ teaspoon sugar

    OR sherry

    OR heat two parts sake and one part sugar

    OR white wine + sugar to taste OR white wine

    (( Or chicken stock, beef stock, vegetable broth ))

    White grape juice mixed with lemon juice or lemon zest


  4. Sake plus sugar!
