  1. No roll No fuss Peach Cobbler

    1-28oz Can Peaches sliced

    2 1/2cups Sugar

    1 stick of butter

    1 cup plain flour

    4 tsp. baking powder

    pinch of salt

    1 1/4 cup milk

    Preheat oven to 350 degrees. In a bowl pour the peaches and juices in and add 1 1/2 cups of the sugar, stir and let sit. In a 9x13 pan put the stick of butter in and put in the oven till melted. Make the batter while the butter is melting. In a medium bowl add the left over 1 cup sugar, flour, baking powder,salt, milk. Stir with a wisk or fork briskly. It looks like it won't work but it does. Take the pan out of the oven and pour the batter in the pan. Once in the pan don't stir anything! Then pour peaches mixture over the batter. Bake in oven for about 1 hour or until lightly browned. Take out and let sit for about 15 minutes before serving with a large spoon. Good with vanilla ice cream too.  

    WINTER PEACH OATMEAL

    1 C oats

    4 C water

    1 C dried peaches,chopped (Use a drained can of peaches - dry the peaches out on a paper towel)

    1/2 ts ground nutmeg

    1 C white grape juice

    1 (6oz) carton peach or vanilla low-fat yogurt

    6 TB walnuts, toasted.

    Combine oats & water in a 3 1/2 to 4 qt slow cooker. Cover; cook on low setting 6-8hours or until oats are tender & cereal is thick.

    Combine peaches, nutmeg & white grape juice in small saucepan. Cover; bring to a boil, then reduce heat & simmer 8 min or until peaches are tender. Uncover; cook 2-3 minutes or until liquid is slightly reduced.

    To serve, spoon cooked oats into bowls. Top each serving with 2-3 TB warm peaches & syrup, then a dollop of yogurt. Sprinkle with walnuts.


  2. My mom fixes this all the time and our whole family, neighbors, and friends love it.  It's really easy, too.  She's used canned peaches before and it turns out just fine.

    Fruit Cobbler

    Berry mixture:

    1 qt. berries

    1 c. sugar

    1-2 T. flour (more for blackberries, less for peaches)

    Sweeten berries with sugar and flour mixture.  

    Spread in bottom of pan.

    Crust:

    ½ c. melted butter

    1 c. flour

    ¾ c. sugar

    1 egg

    Mix, then drop or spread over berry mixture.  Bake at 350° for 45 min. or until crust is done.  (More time required for frozen fruit.)


  3. Toast a handfull of oats in the oven and cool it down. Knead into the pie crust(only if the crust is a regular crust and not puff pastry). Line a pie dish with the pastry. Bake blind until slightly browned about 10 mins at 180 celcius.

    Drain the syrup of the can peaches. Boil the oats in the syrup from the peaches mixed with equal parts milk. How much oats u use depends on the size of the dish and how much u put in. Generally i think its safe for you to use 1 part oats to 2 parts liquid.. Make sure the cook oats is firm and not runny. It should be quite hard to stir. Add more brown sugar to taste..

    Add the cooked oats to the pie crust and pack it. Sprinkle a thin layer (about 2mm thick) of brown sugar on the top of the filling and bake until crust browns and sugar caramelizes. Top with the peaches from the can. You could choose to slice or cube or do whatever u want with the peaches before putting it on the pie. Alternatively u could cut up the peaches and mix it with the oats before filling the pie crust. Happy baking!
