What can my mom make with raspberries?

My mom just bought some raspberries, and says " I dont know what I'm going to do with these", haah...so what can she make with them? Thanks.

  1. To prolong shelf life in the raspberries, cook equals parts of raspberries with sugar over high heat.

    It will turn into syrup for pancakes or ice cream..Plus you can save them for later use.

    or

    Put them on the blender with vanilla ice cream and drink as a smoothie, You can also use plain yougurt to make a smoothie instead of ice cream

  3. Raspberry Cheesecake Muffins

    1 cup of fresh raspberries

    3 eggs

    1 cup of sugar

    1 3 oz pkg cream cheese

    6 tablespoons of butter

    1 ½ teaspoons of vanilla

    2 ½ teaspoons of baking powder

    2 cups of flour

    ½ teaspoon of salt

    Instructions:

    Preheat oven to 400°F.

    Grease muffin tin or line each with paper cases.

    In a bowl, beat together the cream cheese with ¼ cup of sugar, 1 egg and ½ teaspoon of vanilla until completely smooth.

    Put to one side for later.

    In a saucepan, combine the butter, milk and remaining vanilla stir continually over a medium heat until the butter has melted.

    Cool the mixture until warm to touch, then beat in the remaining 2 eggs, 1 at a time.

    In a large bowl, combine the baking powder, flour, salt, and remaining ¾ cup of sugar.

    Add butter and milk mixture to the flour and baking powder mixture and stir until blended.

    Add the raspberries and gently fold into the mixture.

    Divide the mixture equally among each muffin tin/paper case.

    Spoon approximately 2 teaspoons of cream cheese mixture on top of each of the muffins.

    Bake about for about 20 minutes or until the muffins are springy but firm.

    Raspberry Chocolate Croissants

    INGREDIENTS

    1 (17.25 ounce) package frozen puff pastry, thawed

    6 tablespoons chocolate hazelnut spread

    3 tablespoons all fruit raspberry jam

    1 egg, beaten

    1/4 cup confectioners' sugar for dusting (optional)

    DIRECTIONS

    Preheat the oven to 400 degrees F (200 degrees C).

    Unfold the puff pastry sheets on a lightly floured surface. Cut each one into thirds along the fold lines. Roll each strip of dough out to about 16 inches long, and cut strips into thirds.

    Spread some of the hazelnut spread onto one half of each rectangle to within 1/2 inch of the edge. Spread about 1/2 teaspoon of the raspberry jam over the hazelnut spread. Brush the edges with egg, and fold over the other side to enclose the filling. Press the edges firmly to seal. Repeat with the remaining rectangles. Use a sharp knife to cut 5 slits across the top of each pastry, and place them on baking sheets, spacing 2 inches apart.

    Bake for 18 minutes in the preheated oven, or until golden brown. Cool on racks. Dust with confectioners' sugar when cooled if desired.

    Raapberry Icebox Cake

    INGREDIENTS

    24 graham crackers, crushed

    1/3 cup butter

    1/4 cup packed brown sugar

    1 (6 ounce) package raspberry flavored gelatin mix

    1 cup boiling water

    15 ounces frozen raspberries

    20 large marshmallows

    1/3 cup milk

    1 cup heavy whipping cream, whipped



    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C).

    Mix graham cracker wafer crumbs, butter and brown sugar until well combined. Set aside 1/4 cup of this mixture for a topping and press the remainder into one 9x13 inch pan.

    Bake at 350 degrees F (175 degrees C) for 10 minutes. Set aside to cool.

    Dissolve raspberry gelatin in the boiling water and add the frozen raspberries, stirring until melted. Chill until partially set and spread on wafer base.

    Melt marshmallows with the milk. When cool, fold in whipped cream and spread on top of raspberry mixture. Sprinkle with remaining crumbs. Chill for 3-4 hours before serving.

    Raspberry Chocolate Smoothie

    INGREDIENTS

    3/4 cup chocolate flavored milk

    3/4 cup chocolate sorbet

    1 1/4 cups frozen unsweetened raspberries

    1/2 banana, peeled and sliced

    1 leaf fresh mint, chopped

    DIRECTIONS

    In a blender, blend the soy milk, sorbet, raspberries, and banana until smooth. Garnish with mint to serve.

  11. This is a killer recipe. It's really just a brownie, so it's very easy, but it looks super fancy and it's hard to beat that chocolate raspberry combination.

    Chocolate Raspberry Brownie Cake

    1/2 cup butter

    3 ounces unsweetened chocolate

    1 cup sugar

    1/2 cup chopped pecans or walnuts

    2 large eggs

    1 teaspoon vanilla

    2/3 cup flour

    1 cup fresh raspberries -- rinsed and drained

    Preheat oven to 350. Butter and flour a 9 inch round tart pan with removable rim. In a 2 to 3 quart pan over low heat, stir butter and chocolate just until melted, about 5 minutes. Remove from heat and mix in granulated sugar, pecans, eggs, and vanilla. Add flour and stir to mix well. Spread batter in pan. Next to rim, distribute berries in a band about 2 inches wide. Gently press fruit into batter. Bake until top, at outside edge, cracks and feels firm to the touch, 45 to 50 minutes. Let cool in pan on rack. Dust with powdered sugar before serving.

    Family and friends will never guess the secret ingredient in this jam-tomatoes! "I got the recipe from a co-worker, and it is just delicious," jots Elizabeth Baker of Birdsboro, Pennsylvania.

    INGREDIENTS

    5 cups chopped peeled fresh tomatoes

    4 cups sugar

    1 tablespoon lemon juice

    2 packages (3 ounces each) raspberry gelatin

    METHOD Freezer (Jams, Jellies or Pickles)   PREP 15 min.  

    COOK 35 min.  

    TOTAL 50 min.  

    In a large saucepan or Dutch oven, combine the tomatoes, sugar and lemon juice. Cook and stir over high heat until mixture comes to a boil. Reduce heat; simmer, uncovered, for 25 minutes. Remove from the heat. Skim off foam if necessary. Stir in gelatin until completely dissolved.

        Pour into jars or containers; cool to room temperature, about 1 hour. Cover and let stand for 3 hours or until set, but not longer than 24 hours. Refrigerate for up to 3 weeks. Yield: about 5-1/2 cups
