What can substitute red wine in cooking?

i cant drink alcohol but love cooking. i find that a lot of recepies uses red wine or alcohol for that matter. i was wondering what i can use to replace that.

  1. I use chicken broth with a squeeze of lemon juice to replace most wines. If it is a fruity alcoholic drink, I substitute some juice.

  2. I would substitute a beef broth with a couple tbsp of balsamic vinegar- good flavor, not too pungent but has the acidity needed for most recipes that call for red wine.

  3. I run across this a LOT.....If you have grape juice and red wine vinegar, use the recommended amount of grape juice LESS one tablespoon, and replace the tablespoon with the vinegar.....After all, red wine is just fermented and soured grape juice....

It depends on what the recipe is.  If it's a hearty meat recipe, like a stew or a braise, you can usually just replace the wine with beef, veal or even chicken stock.  If it's a salad dressing, you can usually replace it with red wine vinegar.  If you're deglazing the pan with it, you can use  a nice vinegar or even a fruit juice, though that will make it a little sweeter.

    Most red wine recipes cook off most of the alcohol, though not all, so if you're allergic, don't do this, but if you just don't want the alcohol to go to your head, you should be fine.  Remember that if you add a cup of red wine to a recipe that feeds 8, that's less than an ounce per serving even before cooking.  By the time you finish, you're looking at less than a teaspoon.  And if it cooks for a long time, it will be negligible.

  6. Beef stock, chicken stock or vegetable stock.  Water.   If you boil the food the alcohol will cook out of it so all that is left is the flavor of the wine.
