It is always polite to stop whatever your'e doing and give the new person, your attention ( by this , I mean don't carry on a phone conversation at the same time), a gentle, yet firm hand shake works for a man or a woman. When the conversation is concluded, you can say either  " hope to see you again" or if that is really a bald lie, you can politely say "have a great time, or day," and or "it was so nice of you to stop and chat". Those are a few politeness indicators and I think fairly gracious ones. Graciousness is a beautiful thing, and never wrong . In conclusion, thanks for posing your question and have a wonderful day!
