  1. Study the evolution of being poor.

  2. Anthropologist

    Archivist

    Archaeologist

    Historic Park Manager

    Museum Curator

    Museum Registrar

  3. Consider international work, either inside of the U.S. government or the United Nations (or other governments should you be in another country) ...

There are a number of times in which anthropologists are called on to do studies or assist in a situation. These are often sort of "consultant" positions, however.

Naturally, should you be so inclined, there are a host of underdocumented cultures waiting to be visited and investigated if you should ever find yourself desiring academic research and the academic life. These will likely require a grant, however, which is harder to get than merely wanting to investigate a region :)

  4. Do you want fries with that?

    :-)

  5. write a book, discredit the Leakey family

  6. Study for a Ph.D. in anthropology!

(I'm not familiar enough with the field to know what else, sorry.)

  7. If you walked into an employment agency, they immediately would start looking for you a position as an adult or juvenile probation officer!

For some reason, anthropology gets lumped into that area of employability by employment agents.  Apparently the thinking is that people who are interested in mankind's ecological, evolutionary, sociological, and biological origins are also bleeding-heart "save the world" psychology and education-profession types who want to be martyrs to the disfunctional of society.
