  1. That's a tough one.

If you want to get people to buy more local food (which is much better for the environment), you have to not only get the word out to communities about farmer's markets and where they can buy local food, but ALSO, you have to convince them to pay more than they do at the big mega-grocery. As food prices surge, a lot of people simply can't afford to eat more locally-produced food.

If you want people to eat more organic food (which is also better for the environment, as well as being healthier), again, you face the same problem: getting the word out and convincing people to pay more for food.

If you want people to eat healthier, that's easier, in that mega super grocery stores do carry healthy options -- getting people to choose such, however, is a challenge. No one wants to live in a nanny state, but, at the same time, obesity is becoming a public health problem.

The Sierra Club and other environmental organizations often engage in campaigns to convince people to buy local. Some communities of faith (churches, temples and mosques) are encouraging their members to eat healthier, as gluttony in most (all?) religions is a sin, among other reasons. And there are community gardens that do more than just provide spaces for urban gardening; they also provide programs that promote organic produce.

So, there's some options. Might take a lot of looking around. Might take you starting a campaign of your own.

  2. work on yourself.

  3. Perhaps you  can get a lot or an few acres donated and have people plant their own seeds and grow their own food.  Eating fresh vegetables and a reduced cost, or no cost can change the eating habits.  People using a large parcel of land can grow quite a bit of food and give the extras to food banks or sell at road side stands or just donate it to others..

Start a co-op of food growers
