  1. I know I am too late, but, for future reference, here is what I make, from Julie  Sahni:  Makes 1 cup

    1/2 cup coriander seeds

15 dry red chili pods (I usually use 8)

    1 1/2 teaspoons cumin seeds

    1 1/2 teaspoons mustard seeds

    1 1 /2 teaspoons fenugreek seeds

    1 1/12 teaspoons black peppercorns

15-20 curry leaves, dried or fresh

    3 Tablespoons ground turmeric

If using fresh curry leaves dry them briefly in a frying pan over low heat, 4-5 minutes. The recipe says the leaves are optional, but I've never made it without them.

Mix the ingredients except turmeric and grind in a spice or coffee grinder in smallish batches. Put in a bowl and mix in the turmeric. Transfer to an airtight jar and use within 3 months or keep in the fridge and don't worry about how old it is.

Chili pods can be omitted if you don't like heat.

  2. there are many different kinds of curry,Indian, curry, Japanese Curry, Thai curry, some come in a powder form some in a paste, there is green, yellow, red, brown curry. since curry is made from a mixture of about a dozen different ingredients you would be better off buying it instead of buying all the ingredients and trying to find the right mix.-blurey

  3. try chilli powder thats a good spice that goods well with chicken

  4. If you have these spices on hand:  that should be a good sub

    for curry powder

    1/2 tsp turmeric

    1 tsp ground cumin powder

    1/2 tsp ground coriander powder

1/2 red chili powder, to taste

optional:  pinch of nutmeg, pinch of cardamom powder, pinch of cinnamom

  5. If you are just after the yellow color, use tumaric.

    For flavour, use garam masala.

  6. corriander, cumin, garum masala, ginger, garlic, paprika, tiny bit of chilli should sort you out although curry powder would be easier. or try a curry paste

  7. Curry is bascially a mixture of all sorts of herbs...

Here is an example: Most recipes and producers of curry powder usually include coriander, turmeric, cumin, and fenugreek in their blends. Depending on the recipe, additional ingredients such as ginger, garlic, fennel seed, cinnamon, clove, mustard seed, green cardamom, black cardamom, mace, nutmeg, red pepper, long pepper, and black pepper may also be added.

  8. In the future if you need to substitute a spice or other ingredient for a recipe visit this website

It is basically a food thesaurus! :)  Very practical!

  9. All purpose spice, its a mixture of different spices.
