What can the green sprouting leaves from the carrots be used for?

Are they edible?

If nobody replies I am going to eat them at 5 o'clock.

  4. Absolutely nothing, I work as a chef and if they could be used they definitely would.  You have to make the most money out of your food to survive in the business, nothing gets thrown away if it can be used.

  5. They're peppery tasting and nutritious, I don't see why you cannot eat them if you like that sort of thing. They've been used in gourmet cooking beforehand and I've seen recipes that call for them.

    You can try tossing them into other greens for a salad or use them like a herb or a spice, I think they're pretty similar to arugula in taste. Garnish things like you would with parsley for a different taste sensation. Maybe toss it into a pasta dish along with basil, or into a stew or soup. Taste it beforehand so you realize what it tastes like since you might not like it.

    I personally prefer to compost carrot greens or I buy carrots with the greens off already, but as long as you clean them nicely you can eat them just fine.
