  1. they fall in the catagory Lipids and have an Ester linkage.  unsaturated fatty acids have a double bond when seen in a structural formula.  unsaturated fatty acids are oils *liquid at room temp.

    saturated fatty acids have no double bond and are fats that are *solid at room temp. aka triglycerides.


  2. Unsaturated are a lot harder to break down and are horrible for your veins. Saturated are the opposite yet still a little fatty.
