  1. A fungus needs moisture so a hard dry cheese will be less suitable. Romano is very hard and is unlikely to grow mold. Very soft moist cheeses like cottage or cream cheese will generally grow mold faster. Moisture content is what is meant by "soft", "semi-soft", "semi-hard", and "hard".

    Aged cheeses such as Emmentaler and cheddar have no residual lactose. The fermentation has converted it all and produced acidic byproducts that lower the pH of the cheese so the cheese may be termed "sharp".

  3. I think any probably old & kept in dark, wet, damp,

    spaces. The place will need to be kept in a place where

    the moisture will be held in ( like a plastic bag ).
