depending on the variety, red, orange, maybe some green and yellow.I have found if it's slightly soft and has a fragrance, it's ok even if it has some green.  If it doesn't have a smell, it probably won't have much taste.

different mangos, different colours, I work on feel, nice and soft and get eating.  Best place to eat one... sitting in a bath.
