What colour should ox tongue be when cooked?

I've cooked it for a little over 2 hours, when I slice it its red and grey/brown in the middle. Should it all be grey/brown?

The color is fine.

You may have overcooked it a bit but it's fine.

I forgot to mention,

the color should be grayish on the inside and slightly pink outside.
