What company does check passports at Canadian airports?

Since I've never heard of a "check passport" (but have heard of a Czech passport), I'm assuming you mean "who checks passports at Canadian airports?"  If so, the first person would be the airline's agent at the check-in counter.  If you are headed for a country that has pre-clearance (such as the U.S.), you will also have to show it to that country's agent.  And then, you may also have to show it when you go through security, and possibly at the boarding gate, although that is done rarely now.
