What cooking device can I use if I need to use metal spatulas on it, but do not want anything to be scatched ?

I want to make some Japanese Okonomiyaki, it is also referred to as a Japanese omelette or pancake,. In order to cook it I need to flip the Thing over and that is where the metal on the surface of the cooking device comes in?

Do I use a skillet? a Wok? or something else ??? I Don't know please help.　助けてください。

Use a nonstick pan and a plastic or nylon pancake flipper?

cast iron skillet is good for this as metal will not do the damage
