What could I use to cook something simple with rice?

Most anything goes with rice. My sons like baked chicken and rice. Instead of water I use Cream of chicken soup and one can of water, right before I take it from the oven I sprinkle shredded cheese all over the top and let it melt. Fried pork chops are quick to cook, use center cuts, and a side or two. I grew up eating rice, we even had rice with fish! My husband grew up eating potato's, cooked any way possible. He thinks of rice as a cereal, I think of potato's as too heavy.

Paella  -  it has seafood and vegetable with rice.

Broccoli or chicken. Or you could use yellow raisins and pine nuts.

Well if its white rice them you could make broccoli and cheese and put the rice down first, then the broccoli, then top those with the cheese, and have that with baked chicken or fish.
