What course should I take?...?

Introduction to Anthropology, Psychology, and Sociology... or .....philosophy?

Which course would you say is less boring and or easy to pass?

I'm 16 and going into grade 11.

Just based on general subject matter I prefer psychology, sociology and then anthropology.  However, a good teacher can make any boring subject interesting.  The difficulty of the class is also up to the teacher or professor.  They can make an interesting class difficult to get an A in.  Some of the hardest classes I've taken were also the most interesting.  Why don't you ask some people at your school for suggestions?  You could also look up what each subject covers and see what you're most interested in.
