What kind of course are you interested in?  Not many things now a day have crash courses, except as mentioned above, driving.

How about cooking or go to culinary school.

I know driving is dangerous in Ireland so understand your mother wishing to take a crash course. This will prepare her for getting crashed into regularly. My advice is to get the strongest safest car and keep away from other cars as much as possible.
