  1. Frittata:-  Carrot, Corn and Pea.

    (by Dune 11/8/08)

½C. Carrots. (diced, cooked or frozen)

½C. Corn kernels. (cooked or frozen)

    ½C. Peas. (cooked or frozen)

    6 Eggs.

    S&P to taste.

    Preheat the grill. (broiler)

    Whisk the eggs together.

Place vegetables in a 300mm (12”) and start to heat and then pour over the eggs and let them run through the vegetables.

Season and let the bottom set.

Place under the grill until the eggs finish setting.

You may want to shield the handle.

Turn out and slice like a pizza.

  4. Spanish potato omelet...  Also have you got cheese and soft flour tortillas????... saute onions and peppers mix in eggs cook, then warm up the tortilla add cheese and wrap up to make egg burritos. Dip in salsa, guacamole or sour cream

  5. Omelettes are the best!

  6. A delicious omelet. Sounds great right now.

  7. Make a quiche if you dont like that go simple and try an omlette or if you have leftover pasta. try a "torta di pasta" you heat oil and a tablespoon of butter. have the pasta in a bowl. then add sun dried tomatoes(i f you like it) and add whisked eggs to the pasta. Toss to coat. then put all the pasta in a pan. compress so that its all nice and tight. Cook till the bottoms nice and golden. Then place under broiler till the top is golden brown!  Its delicious! (check the food network website videos giada makes it! and it shows how!)

  8. scramble eggs and stuff in a portabella mushroom with sauteed spinach and top with mozzerella and parm cheese. bake this until brown and bubbly.

grill or sautee the mushroom cap a bit before stuffing and make sure you take out the gills.

    you wont be disapponted.

  9. Have you ever tried Quiche???

Take a frozen pie shell.  Mix about 6-8 eggs; add in your favorites whether it be bacon, ham, sausage......diced of course and pre-cooked.  Add in onions, green or red peppers.  Add in grated Swiss, Cheddar, Parma............whatever you like.

Mix all the ingredients together in the eggs.  Pour carefully into the pie shell.  Bake at about 325 degrees for about 1 hour or until center comes out clean when poked with a tooth pick. You can also serve it with a nice dill sauce or hollidaise sauce.

  10. TRY PICKELED EGGS,    .......they not only are a great snack  just by themselves , they are very delicious mixed into a sandwich if you prefer them between bread.

  11. I love egg salad sandwiches....you just hard-boil eggs, peel and mash them, add mayo, salt, pepper. you can dress it up with mustard or seasonings of your choice, diced onion-whatever you like. crumbled, cooked bacon is awesome too-so's cheddar cheese.

omelettes are always a great option.

or, you can make a quiche or a casserole.

  12. 1 cup of mushrooms

    hot peppers to taste

    cut up onions to taste

some kind of meat (can be sausage, hot dogs:cut up)

fry this in a little of olive oil

    finally add ur eggs

I personally add what ever veggies i have on hand. it is never the same... sometimes i have potatoes in it.

  13. A frittata it's easy just beat the eggs, add a little salt, some milk or cream, and whatever toppings you want (tomatoes, spinach, bacon, ham, whatever) sautee some garlic or onions in an oven-safe skillet, pour in the mixture let it cook for a minute and then finish it up in the oven. It's simple and delicious

  14. Quiche!  Yeay!  Blend eggs, milk or cream with shredded cheeses, diced veggies and bacon or ham, salt and pepper, then pour in a pie crust and bake till done at 350.  Serve with hashbrowns.  Yum.
