What dfficulties will I run into moving from the US to a European country?

My wife is from Romania, we have been married 10 years with a six year old daughter. she has been offered work at a substantial pay increase to what she makes here now. We are considering moving there.

What kind of hurdles and hoops are my daughter and I going to have to jump over and through?

If you become an expatriot you'll have to pay a huge tax to the U.S. government...a new law passed this year. If you remain an American citizen you'll most likely still need to pay American taxes.

As long as you apply for all the proper paperwork, you probably won't have any problems at all.
