What dinners and desserts can I make this fall?

I really love cooking and baking, and I want to start making dinner for my family. I need some really good (and somewhat healthy) dinner ideas that won't take to long.

And for desserts...well anything goes!

  1. First things first:  Dessert.

    I know a really quick and delicious dessert for your family.  Oh, it is so good.  Seriously.  

    1) Get some premade cannoli shells from your grocery

    2) Mix together:  1 can vanilla pudding, 1 small tub ricotta cheese, 1 small tub cream cheese or mascarpone, dash of cinnamon, 1 cup powdered sugar.  Mix mix mix.  Add in about 2 cups of milk-chocolate chips.  Mix mix mix.  

    Then, add in about 1 cup of Whipped Cream from a tub.

    Pipe into cannoli shells and sprinkle with more powdered sugar.

    Easy breezy.

    Now for dinner:

    Can match mashed sweet potatoes with anything.

    Roughly peel and dice 3 large sweet potatoes into large chunks.

    Boil for about 30 minutes.

    Mash with 1 tablespoon sugar, 1 tablespoon butter, 1 dash cinnamon (just a touch!), and 1 tablespoon milk or cream.  Whip with mixer.

    Or regular mashed:

    Dice 4-5 red skin potatoes, leave skin on.

    Boil for about 30 mins.

    Add in 1 heaping tablespoon chopped garlic, 1 tablespoon butter, salt and pepper, 2 tablespoons heated milk and 1 heaping tablespoon Non-Dairy Creamer (Cremora).  Whip with mixer.

    Match with so many things to do with chicken:

    Chicken breast stuffed with a mix of: crumbled bleu cheese, chopped walnuts, 1 tsp. brown sugar, 1 tsp. honey, 1/4 tsp. garlic salt.  

    Fill chicken breast with mixture, coat whole breast with mayonaise and dip in bread crumbs.

    Bake in preheated oven at 400 degrees for 35 minutes or until chicken is cooked thoroughly and bread crumbs are browning.

  3. This is the yummiest dessert I've EVER made- try it out!

    Chocolate Chip Cookie Cake

    1 cup flour

    1/2 tsp. baking powder

    1/8 tsp. baking soda

    1/8 tsp salt

    1/2 cup melted butter

    1 cup brown sugar

    1 egg, beaten

    1 cup chocolate chips

    4 tsp milk

    Directions: Preheat oven to 350 degrees Fahrenheit. Sift four, then add baking powder, baking soda, and salt. Sift 2 more times. Mix well, and set aside.

    In another bowl, melt butter. Then add sugar and mix in egg. Blend for 1 and a half minutes on High. Add in flour mixture and milk slowly, then stir in chocolate chips. after you grease and 8 x 8 pan, spread the mixture in it. Bake for 20-25 minutes, and serve with ice cream, if you desire.
