What dish can I make with white potatoes?

I don't have a lot of ingredients because I am not working. Something besides mashed and baked. However if the mashed or baked potato recipe is different or creative, share it. Thank you

  1. Roasted Cajun Potatoes --



    INGREDIENTS

    2 1/2 pounds medium potatoes

    1/4 cup olive oil

    2 shallots, chopped

    1 garlic clove, minced

    1 teaspoon salt

    1/2 teaspoon paprika

    1/2 teaspoon cayenne pepper

    1/2 teaspoon pepper

    2 tablespoons minced fresh parsley

    DIRECTIONS

    Cut each potato lengthwise into eight wedges. In a large bowl, combine the oil, shallots, garlic, salt, paprika, cayenne and pepper; add potatoes and toss to coat. Place in greased roasting pan.

    Bake, uncovered, at 450 degrees F for 45-50 minutes or until tender and golden brown, turning every 15 minutes. Sprinkle with parsley.

    Cheddar Mashed Potatoes --

    INGREDIENTS

    8 medium potatoes, peeled and cubed

    1/2 cup sour cream

    1/3 cup butter or margarine, softened

    1 teaspoon salt

    1/4 teaspoon pepper

    1 cup shredded Cheddar cheese

    2 bacon strips, cooked and crumbled

    1 teaspoon minced chives

    DIRECTIONS

    Place potatoes in a saucepan and cover with water; cover and bring to a boil over medium-high heat. Cook for 15-20 minutes or until tender. Drain and mash. Add sour cream, butter, salt and pepper; beat until smooth and fluffy.

    Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with cheese, bacon and chives if desired. Bake, uncovered, at 325 degrees F for 20 minutes or until heated through and cheese is melted.

    INGREDIENTS

    6 slices bacon

    2 cups all-purpose flour

    1/2 teaspoon baking powder

    10 medium potatoes, peeled and shredded

    2 teaspoons salt

    DIRECTIONS

    Place bacon in a large skillet over medium-high heat. Remove bacon from the pan, and reserve the grease.

    In a medium bowl, stir together the flour and baking powder. Stir in potatoes to make a sticky dough.

    Bring a large pot of water to a boil, and add 2 teaspoons of salt. Squeeze the potato mixture into 6 or 7 dumplings, or your desired size. Drop carefully into the boiling water. Simmer for 45 to 60 minutes. Remove to a platter with a slotted spoon.

    Serve with bacon grease brushed over the top, and crumbled bacon. These may also be sliced and fried the next day for another great meal.

    Creamy Skillet Potatoes --



    INGREDIENTS

    7 cups cubed uncooked potatoes

    1/3 cup chopped onion

    2 tablespoons all-purpose flour

    1 (1 ounce) package ranch salad dressing mix

    1/2 teaspoon dried parsley flakes

    1/4 teaspoon salt

    1/4 cup reduced-fat sour cream

    2 cups fat-free milk



    DIRECTIONS

    Place 1 in. of water and potatoes in a large nonstick skillet; bring to a boil. Reduce heat; cover and simmer for 10 minutes or until tender; drain. Coat skillet with nonstick cooking spray; add potatoes and onion. Cook over medium heat for 5-7 minutes or until golden brown.

    In a saucepan, combine the flour, salad dressing mix, parsley and salt. Stir in the sour cream. Gradually add the milk, stirring until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over potatoes; toss to coat.

    INGREDIENTS

    4 large baking potatoes

    2 tablespoons butter, melted

    3 tablespoons grated Parmesan cheese

    1/2 teaspoon dried rosemary, crushed

    1/4 teaspoon salt

    1/8 teaspoon pepper

    1/2 cup shredded Cheddar cheese

    1/4 cup real bacon bits

    1 green onion, chopped

    DIRECTIONS

    Scrub potatoes. With a sharp knife, slice potatoes thinly but not all the way through, leaving slices attached at the bottom. Place on a microwave-safe plate; drizzle with butter.

    Combine the Parmesan cheese, rosemary, salt and pepper; sprinkle over potatoes and between slices.

    Microwave, uncovered, on high for 12-18 minutes or until potatoes are tender. Top with cheddar cheese, bacon and onion. Microwave for 1-2 minutes longer or until cheese is melted.

    Ham Potato Puffs --

    INGREDIENTS

    1 (12 ounce) package refrigerated buttermilk biscuits

    1 cup cubed fully cooked ham

    1 cup leftover mashed potatoes

    1 cup shredded Cheddar cheese, divided

    1/2 teaspoon dried parsley flakes

    1/4 teaspoon garlic powder



    DIRECTIONS

    Press each biscuit onto the bottom and up the sides of a greased muffin cup. In a bowl, combine the ham, potatoes, 1/2 cup cheese, parsley and garlic powder. Spoon 1/4 cup into each prepared cup. Sprinkle with remaining cheese. Bake at 350 degrees F for 20-25 minutes or until lightly browned. Serve warm. Refrigerate leftovers.

    Hot German Potato Salad --

    INGREDIENTS

    9 potatoes, peeled

    6 slices bacon

    3/4 cup chopped onions

    2 tablespoons all-purpose flour

    2 tablespoons white sugar

    2 teaspoons salt

    1/2 teaspoon celery seed

    1/8 teaspoon ground black pepper

    3/4 cup water

    1/3 cup distilled white vinegar

    DIRECTIONS

    Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.

    Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving drippings.

    Saute onions in bacon drippings until they are golden-brown.

    In a small bowl, whisk together the flour, sugar, salt, celery seed, and pepper. Add to the sauteed onions and cook and stir until bubbly, then remove from heat. Stir in water and vinegar, then return to the stove and bring to a boil, stirring constantly. Boil and stir for one minute. Carefully stir bacon and sliced potatoes into the vinegar/water mixture, stirring gently until potatoes are heated through.

    Southern Potato Salad --

    INGREDIENTS

    4 potatoes

    4 eggs

    1/2 stalk celery, chopped

    1/4 cup sweet relish

    1 clove garlic, minced

    2 tablespoons prepared mustard

    1/2 cup mayonnaise

    salt and pepper to taste

    DIRECTIONS

    Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop.

    Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.

    In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix together and serve warm

    Country Style Fried Potatoes --

    INGREDIENTS

    1/3 cup shortening

    6 large potatoes, peeled and cubed

    1 teaspoon salt

    1/2 teaspoon ground black pepper

    1/2 teaspoon garlic powder

    1/2 teaspoon paprika

    DIRECTIONS

    In a large cast iron skillet, heat shortening over medium-high heat. Add potatoes and cook, stirring occasionally, until potatoes are golden brown. Season with salt, pepper, garlic powder and paprika. Serve hot.

  3. You can make some potato soup.  You can cut the potatoes up and make them round slices and fry them like you're frying french fries and make potato sandwiches.  Both are great!!

    4-6 White potatoes

    1/4c Vegetable or Olive Oil

    1/4 Stick butter or margarine, melted

    2T Flour

    2c Milk

    Boil water. Cube or dice potatoes. Add oil to water and boil potatoes until soft. When done, arrange potatoes in baking dish. Mix melted butter and flour together in a small bowl. Slowly add milk, until mixture is creamy. Pour mixture over potatoes. If desired, top with shredded cheese and sprinkle with salt, pepper and paprika. Let stand 1 hour. Bake in 250-degree preheated oven for 40 minutes.

    BEST MASHED POTATOES

    5 Potatoes

    3T Butter or margarine

    1t Salt

    1/3c Hot milk

    Pepper to taste

    Boil potatoes until soft and then "rice" potatoes by pushing them through a coarse strainer. Pour riced mixture into large bowl and add butter, salt, pepper, and hot milk. Beat with fork until creamy. Reheat, if necessary.

    TRADITIONAL SCALLOPED POTATOES  

    6-7 Medium size potatoes

    2T Butter or margarine

    Flour

    Salt and pepper to taste

    Wash and cut potatoes into 1/4-inch slices. Butter a large baking dish. Place one layer of potatoes into dish. Sprinkle with salt and pepper and add a sprinkling of flour. Dot 1/2 tablespoon of butter on top of layer. Repeat layering process until potatoes are gone. Add hot milk. Bake 1-hour and 15-minutes or until potatoes are soft.

    DOUBLE BAKED POTATOES

    6 Medium sized potatoes

    2T Butter

    Salt and pepper

    3T Milk

    2 Egg whites, beaten

    1c Cheddar cheese, grated

    Pre-bake 6 potatoes. Remove from oven, and cut potatoes in half, lengthwise. Scoop out insides of potatoes and place into small bowl. Mash insides of potatoes. Add butter, salt and pepper (to taste) and milk. Blend. Add egg whites. Refill potato skins and sprinkle with cheese. Bake 5-8 minutes in 475-degree oven.



    QUICK POTATO SALAD

    1-3/4c Potatoes, cooked and chopped

    3T Celery, chopped

    1T Onion, chopped

    2T Salad dressing

    1/2t Prepared mustard

    1/8t Salt

    Pepper to taste

    Precook potatoes. Remove skins and dice. Refrigerate until potatoes are firm. Mix potatoes, celery and onion together in small bowl. Mix salad dressing, salt and pepper and mustard, adding to potato mixture. Chill 2 hours before serving.

    LOW-FAT OVEN FRENCH FRIES

    4 Potatoes

    2t Olive oil

    1/2t Salt

    1/4t Paprika

    Pepper to taste

    Peel and scrub potatoes. Set oven rack to highest level and preheat oven to 450-degrees. Coat baking sheet with non-stick cooking spray. Cut potatoes lengthwise into wedges. In large bowl, combine oil, salt, paprika and pepper. Mix with cut potatoes to coat. Spread potatoes on baking sheet and cook 20 minutes on top rack. Turn potatoes. Cook an additional 10-15 minutes, or until golden brown.

  7. I cube mine up and sprinkle lavishly with garlic and onion powder, salt and pepper.  I fry them in a little oil or margarine with some chopped onion and garlic until they're done and are toasty.  Sometimes I add a cut up hotdog, breakfast sausage or ham to it too.  YUM

    You bake the potato until it is done cut it in half,scoop the  potato out of it's skin and mash them,you can add butter, maybe a little garlic or sour cream ,or cheese if you have some.

    HERB-ROASTED NEW POTATOES

    Yield: 6 Servings

    1 lb 14 oz small red potatoes,

    .unpeeled (or russets)

    1/4 c Chopped fresh basil or 1 tsp

    .dried basil

    1 tb Chopped fresh oregano or 1

    .tsp dried

    1 tb Olive oil

    1/2 ts Salt

    1/4 ts Black pepper

    2 1/4 oz Grated parmesan cheese

    1. Preheat oven to 425F. Cut the potatoes into 6-8 wedges each.

    2. In a large bowl, combine the basil, oregano,oil,salt and pepper.

    Add the potatoes and toss to combine.

    3. Place the potatoes on a nonstick baking sheet and sprinkle with

    parmesan cheese.

    4. Bake for 20-25 minutes of until tender and golden brown.

    VARIATION: Instead of red potatoes, use small Yukon Gold or Finnish

    Yellow potatoes, both of which have yellow flesh. Substitute 2 t.

    chopped dried rosemary for the basil and oregano.


  10. I make potatoe soup alot it is so good I boil my potatoes and cut them up and add some milk, sour cream, butter, shredded cheese, crumbled bacon or cubed ham, some dry ranch dressing, and wala dinner (plus lunch with the leftovers!) is served.

    I also like to cut my up in small cubes and fry with some onions and yellow squash,

    or you can cut them up and put them in aluminum foil with alot of butter and salt and grill seasoning and cook till they are tender and them pour that pack of potatoe topper stuff you can buy at the grocery store on them and add some cheese.

    or you can make your mashed potatoes with some canned milk, butter and sour cream and they are soooo good.  

    or you can make your own home made hamburger helper just slice up your potatoes thin and cook them then add seasonings that you like with some scrambled hamburger meat and cream soups or canned veggies and make your own cassaroles.
