  3. You can even have pizza without tomato sauce in Italy.... just cheese and what ever else you like. Pasta with garlic and olive oil. Pasta with pesto.

    There are many Italian dishes that aren't tomato based.

    In general the cooking from Piedmont and many other regions of Italy do not use much in the way of tomatoes. The sauces are often heavier and cream based.

  5. Alfredo sauce is not Italian. I just got back from italy 2 days ago. I did not get to see all regions but I doubt you'd find it anywhere. You can go for mushroom sauce, truffle sauce, Carbonara, or some places offer just butter and herbs. Or you can go for my personal favorite- Tortellini con panna e proscuitto- cream sauce with ham. Not all places have it and a lot of places that offer it don't have it all the time but when they do, it's GREAT. So much lighter than Alfredo. If you get the chance, visit Pastarito. It's a chain restaurant out there and they have a list of sauces that's seprated into red and white. And they even have a green section- Pesto's also a great choice. Hope this helps.

    Orecchiette con le cime di rapa........you can eat thousand of dishes without tomatoes. It's Italy the fatherland of great food.

  9. - Pasta al pesto (with basil sauce delicious!)

    - Pasta cacio e pepe (cheese and pepper, typical of Rome)

    - risotto agli asparagi (with asparagus) - alla milanese (with saffron), ai funghi (with mushrooms)

    - pizza bianca with... whatever (bianca literally means "white" and this implies that no tomato sauce is used). There is usually a special list in every menu

    - pay attention to the clam sauce, sometimes there might be traces of tomato sauce

    - straccetti alla rughetta if you go to Rome (this is one of my favourite dish) it consists of beef meat cut into small strips cooked with onions, wine (sometimes with balsamic winegar) and rocket salad.

    - if you go to a "griglieria" grilled food is served (there is obiouvsly no tomato sauce )

    - most of the desserts are tomato sauce free (tiramisu- ice cream, cannoli and so on)

  13. There are SO many dishes without tomato sauce.

    Try some gnocchi alla pesto. I'm drooling just thinking about it.

    It is good with pistachio sauce too!

  14. If you are going to the northern part of Italy, you will not have a problem because the pasta dishes are primarily cream and olive oil based.  Dishes with red sauce are derived from southern Italy, although you can also find them in the northern part.
