    Spicy Thai Chicken

    **triple-tested at the Good Housekeeping Research Institute**

    INGREDIENTS

    3 tablespoon(s) Asian fish sauce (nuoc nam)

    1 tablespoon(s) soy sauce

    1 tablespoon(s) brown sugar

    4 (4 ounces each) skinless, boneless chicken-breast halves, sliced crosswise into 1/4-inch-thick slices

    2 teaspoon(s) vegetable oil

    1 large (12-ounce) onion, cut into 1/4-inch-thick slices

    2 red or green chiles (serrano or jalapeño), seeded and cut into matchstick-thin strips

    2 teaspoon(s) minced, peeled fresh ginger

    2 clove(s) garlic, crushed with garlic press

    1 1/2 cup(s) (loosely packed) fresh basil leaves

    Basil sprigs, for garnish

    DIRECTIONS

    1. In medium bowl, combine fish sauce, soy sauce, and brown sugar; stir in chicken slices to coat. Let marinate 5 minutes.

    2. In nonstick 12-inch skillet, heat vegetable oil over medium-high heat until very hot. Add chicken with marinade and cook, stirring occasionally, until chicken slices lose their pink color throughout, about 3 to 4 minutes. With slotted spoon, remove chicken to plate.

    3. Add onion to marinade remaining in skillet and cook, stirring occasionally, until tender-crisp, about 4 minutes. Stir in chiles, ginger, and garlic, cook 1 minute longer.

    4. Return chicken to skillet, heat through. Stir in basil leaves just before serving. Garnish with basil sprigs.

  2. Mostly Mexican dishes.  They were first grown in the mountains of northern Puebla and Hidalgo, Mexico.

    Chilaquiles

    INGREDIENTS:

    1 tablespoon vegetable oil

    4 (6 inch) corn tortillas, torn into

    strips

    1 small onion, diced



    1/2 tomato, diced

    3 serrano chile peppers, diced

    salt and pepper to taste

    6 eggs, lightly beaten

    DIRECTIONS:

    1. Heat the oil in a medium skillet over medium heat, and fry the tortillas until lightly browned and crisp.

    2. Mix the onion, tomato, and serrano chile peppers into the skillet. Season with salt and pepper. Continue to cook and stir until onions are tender.

    3. Stir the eggs into the skillet, and cook until firm.

    Tomatillo Salsa Verde  

    INGREDIENTS:

    1 pound tomatillos, husked

    1/2 cup finely chopped onion

    1 teaspoon minced garlic

    1 serrano chile peppers,

    minced

    2 tablespoons chopped cilantro



    1 tablespoon chopped fresh

    oregano

    1/2 teaspoon ground cumin

    1 1/2 teaspoons salt, or to taste

    2 cups water

    DIRECTIONS:

    1. Place tomatillos, onion, garlic, and chile pepper into a saucepan. Season with cilantro, oregano, cumin, and salt; pour in water. Bring to a boil over high heat, then reduce heat to medium-low, and simmer until the tomatillos are soft, 10 to 15 minutes.

    2. Using a blender, carefully puree the tomatillos and water in batches until smooth.

    Fresh Tomato Salsa  

    INGREDIENTS:

    3 tomatoes, chopped

    1/2 cup finely diced onion

    5 serrano chiles, finely

    chopped



    1/2 cup chopped fresh cilantro

    1 teaspoon salt

    2 teaspoons lime juice

    DIRECTIONS:

    1. In a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, salt, and lime juice. Chill for one hour in the refrigerator before serving.
