Question:

What do I do with a giant zucchini? Any recipes? Or arts and crafts?

I have grown an enormous zucchini, and I don't know what to do with it. It is as big as my cat - and that's no scrawny cat. It's almost too big to eat. Any recipe suggestions that require a LOT of this vegetable?

  1. When they are that big, the only thing they are good for is zucchini bread.  They are not good fried that big.  The bread is awesome!!!


  2. sliced lenghtwise and grilled is AMAZING

    you can treat it as a "steak" and marinade it if you would like before hand too... italian dressing, or any standard steak marinade.

  3. cut zucchini inhalf long way.  scrape out the middle seed portion. you are going  to make a stuffed zucchini

    the middle mix together hamburger, brown and green onion, salt and pepper, garlic, a little bit of soy sauce, ginger. stuff the zucchini.  put is a large pan.  chicken broth and simmer till done.  serve with brown or white rice.  make sure to season the zucchini with salt and pepper before stuffing it   yummy try it you'll like it.

  4. you can cut it in thin circles, dip in egg and breadcrumb and fry, make layers of zucchini, cheese, tomato sauce and mozzarella to make zucchini parmagiana.   you can also let it dry out and save the seeds for next year.  you can also make a zucchini stew,  it is delicious, and i made some yesterday.  if you need anymore recipes, email me.

  6. You could make a casserole with it , fry it, scrape the inside out and make tuna salad and set it inside for a nice snack , too!!

  7. I don't have a recipe, but Zucchini Bread uses quite a bit.  Also, slice it into 1/4 inch thick slices, marinate in an italian dressing and grill - very yummy!

  8. Shred it and bag it in 1 cup amounts. Freeze. Use in Pancakes, zucchini loaf, muffins, etc.  You could cut it in half lengthwise, scoop out the middle and stuff with a meatloaf mixture.  Drizzle with tomato sauce and bake until the zucchini is soft.

  9. Cut in half lengthwise.  Scoop out the seeds and woody parts, toss.

    Scoop out the meat of the zucchini, place in food processor.  Add an egg, cheese, spices (for meatloaf) and bread crumbs.  Spin around in the food process for a short time, pulse.

    Place back in the zucchini boats.  Bake 350 for about an hour.

    Whatever you like in meatloaf, will be good in this.

    I do this once or twice a zucchini season.
