Hi, I planted a veggie garden in the spring, now I have veggies coming out of my ears! I was wondering if you guys had any ideas as to ways to fix different dishes with all this stuff. I am also interested in canning recipes too... I have...

Cabbage

Califlower

Tomatoes

Hot peppers

green peppers

Cukes

egg plant

beans &

Zuchini

Any ideas will be appreciated, I dont want this stuff to go to waste!!!

  1. that sounds so good!

    i'd make a giant salad.


  2. you can make some nice soup, you can make eggplant Parmesan with the egg plant, with the zucchini, you can even lightly batter and fry the zucchini blossoms,

    maybe even donate some of the extra veggies to a local soup kitchen if you feel you have too much and are running out of ideas.  

  3. Cut them all up and put them in ziploc baggies. Try to pawn as many of them off on your friends and family as possible, then just keep them in your freezer, and take them out whenever you feel like eating them.

    Try making a "Veggie Pizza" with a frozen cheese pizza from the store you "dress up"

  4. Wow, great garden, good for you - congrats!!

    Salsa w/the Tomatoes & peppers.  (freezes well)

    Marinia sauce w/ the tomatoes and pepper - also freezes well.

    A wonderful veggie soup w/most of them, adding some rice, barley or pasta.

    Zuchini bread is a fave, and IT also freezes well.

    Yay to the soup kitchen idea!  

    Baked eggplant is fantastic and I love (this is so tacky) to take a whole cauliflower and dump a bottle of low-fat italian dressing over it and bake it off.  YUM!

    PS:  trade w/neighbors who may have produce you didn't plant and vice-versa.  Start a n-hood fruit&veg stand/trading post!

  7. You could try blanching them this is a great way to store veggies when the so re's too much.. Blanching is a cooking term that describes a process of food preparation wherein the food substance, usually a vegetable or fruit, is plunged into boiling water, removed after a brief, timed interval and finally plunged into iced water or placed under cold running water (shocked) to halt the cooking process.. Blanching neutralizes bacteria and enzymes present in foods, thus delaying spoilage.
