I'm a fairly new vegetarian, within the past month, and I would like to attempt some recipes with beans, but I've never really used them before and I don't know which ones are good and have no clue what to do with them. Please give me some EASY and SIMPLE recipe ideas????

  1. Boil Great Northerns til tender, salt and pepper.

  2. potato (chop it up and cook it)

mix black beans, diced tomatos, corn, peas, onions, peppers (use canned or fresh, add can of salsa if easier)

some cheese if you'd like ...

delicious :)  have some rice or spanish rice with it too.

rice and beans with veggies or salad on the side.

whole wheat pasta with mixed veggies (can always use frozen!) and beans of your choice in pesto sauce.

  3. Canned beans are awesome! Drain the juice and rinse in a strainer. Use kidney beans, red beans, garbanzos, white beans, northern beans, lentils. Use them all -- they're all great!

When in doubt, get a chili starter packet and cans of crushed red tomatoes and an onion and make chili. throw them in a can of tomato soup. mix them cold with a bit of vinegar, lemon juice and olive oil. Beans are just awesome!

  9. First soak whole beans before you use them. It's good to use the best water. Like purified if you drink purified water.

The amount of soak time varies from one bean to another. Basically they need to swell and become softer but not be effected by hot weather or else the water will ferment. Overnight is usually fine.

Mung beans are my favorite because they are a staple in some counties, mixed with rice.

All beans can also be sprouted. After soaking you keep them in a jar for one to 3 days depending on the bean and you rinse them daily. For some twice a day.

Then they can be added to salads or thrown in near the end of cooking veges or grains.

If you look up Indian vegetarian cooking then hopefully you'll find recipes with mung. The split mung is yellow and it is used to make dal and kitchari. The whole mung has a green skin.

Chick peas need longer cooking but they are full of protein. In Indian cooking they mostly use the chick pea flour which is called Besan (Beysan). They make pancakes and vegetable fritters (pakoras) with it. Fried in ghee (clarified butter).

Many vegetarians like lentils which are nutritious also.

All beans or legumes give comlete protien when mixed with a grain. Kichari in Indian cooking (the staple for all poor people especially) is white rice and split mung cooked together with spices. We can use brown rice, cracked wheat or any of the many grains available though. Getting the spicing right is the key to nice Indian preparations but we don;t need to make hot curry. Just mild spices like cumin, coiander, tumeric and ginger are best. Fennel and fenugreek also.

That's all I'll say. You'll have to find sites or books as I don't have any handy and can't think of any off hand. Good luck

  10. Whatever you do, I suggest you avoid canned beans. The lining of cans contains BPA, which may be linked to health problems.

  11. Take a tortilla and wrap those beans in it with some ground beef.  And cheese.  And sour cream.   It's been a dietary staple of billions of people for generations.

  12. bake beams , green beam casserole   green beam with potatoes.. 3 beams salad ,
