I have baked some choc chip biscuits and now have half a can of sweetened condensed milk left over. Does anyone know of anything I could bake to use up the rest. I don't particularly want to bake another lot of choc chip biscuits.

  1. You could so a small batch of rumballs.  Or just eat it.  Very fattening but yummy !!!

  2. Caramel slice:

crush up some plain biscuits (like Marie biscuits or similar), mix the crushed biscuits and some of the condensed milk and some butter together and press it into the bottom of a slice dish. Then you can then use the rest of the condensed milk, along with 15g butter and 1 tbsp of golden syrup and melt in a saucepan over medium heat until it goes brown and 'caramel-y' then pour over the biscuit base and cook in the oven for 10-12 mins. Then when it cools, melt some chocolate and spread it over the top.

    OR:

Jelly Slice: (obviously halve all measurements, as you only have 1/2 tin condensed milk

    200g packet of Marie biscuits

    125g unsalted butter, melted

    2½ teaspoons gelatine

    ¼ cup (60ml) water

    250g cream cheese

    395g can sweetened condensed milk

    1/3 cup (80ml) lemon juice

    ½ cup (125ml) cream

100g packet of jelly (the flavour of your choice)

    METHOD

Blend or process biscuits until the mixture resembles fine breadcrumbs. Pour in butter and blend until combined.

Press biscuit mixture evenly over the base of a 20cm x 30cm lamington tin. Refrigerate until required.

Meanwhile, sprinkle gelatine over the water. Allow to stand for a couple of minutes to allow the gelatine to absorb the water. Microwave for 30 seconds or until dissolved.

Beat cream cheese until smooth in a medium bowl. Add condensed milk, lemon juice and cream. Continue to beat until smooth. Stir in the gelatine mixture and fold through the cream. Pour over the top of the biscuit crumbs. Refrigerate for 4 hours or until set.

Make jelly according to packet directions, but using only half the amount of water stated on the packet. Cool to room temperature before pouring over the cream cheese layer. Allow to set completely.

    Cut into squares and serve.

  12. You could make a small batch of fudge by using your 1/2 cup sweetened condensed milk with 6 to 8 ounces (3/4 to 1 cup) chocolate chips.  Microwave them together, stirring often, and then spread it into a buttered pan.  Add chopped walnuts before pouring into pan if desired.  Chill in refrigerator and then cut into pieces.

  13. 1) Add a half a cup whipping cream, whipped, and some lemon juice, and you have a delicious lemon dessert.
