  1. You could use the Pork in a Shepherd's Pie.

    Shepherd’s Pie.

    1 minced onion

    1/4 tsp. hot pepper sauce

    1 tsp. Worcestershire sauce

    3 c. minced cooked lamb

    1 1/2 tsp. salt

    1/4 c. hot milk

    6 med. peeled boiled potatoes

    1 slightly beaten egg

    4 tbsp. butter

    1 1/2 c. gravy

    1/4 tsp. pepper

Sauté onion in 1 tablespoon butter until soft, but not brown. Remove from heat; mix in meat, gravy, pepper and Worcestershire sauce, and 3/4 teaspoon salt. Beat until fluffy potatoes, remaining salt, and butter, pepper, and hot milk. Put meat mixture in 1 1/2 quart baking dish. Top with fluffy potatoes, score with fork to make a pattern. Brush with egg. Bake at 325 degrees for 45 minutes.

If made with beef mince it would be a Cottage Pie.

  2. Make cuban sandwiches....they are SO good. This recipe is from foodnetwork.com. It calls for provalone but I suggest swiss cheese.

    CUBAN SANDWICHES

    4 hoagie rolls

    2 tablespoons yellow mustard

1/4 pound baked ham, thinly sliced

1/4 pound roast pork, thinly sliced

1/4 pound provolone cheese, thinly sliced

10 thin dill pickle slices, approximately 2 whole pickles

1 tablespoon unsalted butter, room temperature

Slice the bread horizontally in half, leaving 1 edge intact. Lay the bread open and spread each side with the mustard. Divide the ingredients evenly among the slices of roll. Start with the ham followed by the pork, cheese, and dill pickles. Bring the tops and bottoms together.

Heat your panini maker or sandwich press. Butter each side of the press. Place the sandwiches inside, press down and grill until the cheese is melted and the bread is flat and browned, approximately 10 minutes. If you don't have a sandwich press, you can heat 6 fireplace bricks wrapped in foil, in a 500 degrees F oven for 1 hour and then press the sandwich between them for 10 minutes. Serve warm.

  3. Make a soup.

Just chuck some veggies in a pan that you think might taste nice with pork and add some water with or without stock. I do it with beef leftovers so dunno how it would turn out with pork...might be naasty! But you'll never know if you don't try it!

  4. Pork tamales

2 c. diced pork (left over from roast)

Saute onions in butter and add celery and peppers. Cook 10 minutes. Add next 7 ingredients. Cook 15 minutes. Add diced pork and simmer 5 to 10 minutes. Serve hot on buns.

    SWEET AND SOUR PORK

3/4 lb. pork butt or left over pork from chops or roast

1 sm. green pepper, cut in strips

1 lg. tomato cut in wedges

    3/4 c. chunk pineapple

    1 sm. can mandarin oranges

Cooked rice to serve 4 to 6.

    SAUCE:

    1/4 c. water

    1/4 c. vinegar

    6 tbsp. sugar

    2 tsp. Worcestershire sauce

    Dash of Tabasco

    1 tsp. soy sauce

1 tbsp. cornstarch in 2 tbsp. water

If using fresh pork, trim fat from meat and cut thin strips into 1" squares. Cook meat in small amount of hot oil in a large fry pan for 10 to 15 minutes or until done. Drain fat from pan.

If using cooked left over pork, trim excess fat and cut into 1" chunks. Place in a large fry pan. No need to heat.

Prepare sauce by combining all ingredients, except cornstarch in water, in a medium saucepan. Bring to a boil and simmer 1 minute. Slowly add cornstarch and water mixture and stir and cook until thickened. Add green pepper to sauce and cook 1 minute.

Transfer sauce mixture to fry pan with meat. Add tomato, pineapple and mandarin oranges and heat through. Serve over rice.

hope these help.               good luck and enjoy.
