What do I use on top of kitchen island to protect it?

Looks like butcher block, not sure. There is some dull spots that look like scrapes from packing or

from sandpaper.

If you mean to finish the surface you have a few choices:

Clear urethane varnish, or boiled linseed oil, if it's raw wood.

Check with your Home Depot or hardware store.

There are fine polishers like those used on car finishes;-}

that should remove any dull spots.

Actually - do not put anything on it - that way you can use it as a chopping board.
