There is a good natural history museum there and the largest city park in the world. However, I'd probably spend most of my time eating (and drinking) myself silly. So many wines, so little time.

I don't understand.  Why would you think biologist would do anything different than anyone else who visits France?  My interest in insects might prompt me to go out to the woods to see their insect life after I had spent a few weeks visiting the monuments and art galleries.
