Don't do overtime.

If you are legitimately paid a salary as an "exempt" employee, you are exempt from being paid separately for overtime work, and you do nothing.  If you are paid hourly and are "non-exempt" and your employer does not pay overtime, you can report them to the State.  it is probably a department called Employment Security or something similar to that.  If you have any friends who collect unemployment, it is probably the same office (because they deal with workers rights) and you could ask there.
