  1. Sulfites are preservatives used in making wine.  ALL wine has some to a certain degree, and if someone has an allergy, they can prove problematic.  Headaches are usually the clue that you're allergic but in worst-case scenarios, they could induce encephalactic shock, which is potentially fatal.  Ask your physician about it!!  American wines usually display this on the bottle, but other countries don't...since it's understood that ALL wines have them.

  3. I have heard that you can get bad headaches and hangovers from them but never experienced it myself.

  4. They are preservatives in wine. A good way to battle the ill effects of them is to eat cheese with your wine. I can't remember how to explain it, but something in the cheese negates the impact of the sulfites and helps prevent headaches and wine hangovers. That's why it's always been said that cheese goes great with wine!
