What do the initials "P.C." after a firm name mean?

I see it a lot after a law firm's name. I'm pretty sure it means "professional corporation," but what does that mean?

I'm wondering, if I'm trying to get a job at a law firm that is "Jones & Jones, & Doe P.C." can I refer to it as a "firm" in my cover letter?

    Professional corporations (abbreviated as PC or P.C.) are those corporate entities for which many corporation statutes make special provision, regulating the use of the corporate form by licensed professionals such as attorneys, architects, and doctors.
