While that's the general tendency of each, the fact is that any instrument can be played to convey any mood if the musician is sufficiently skilled.  Listen to a good recording of "trumpeter's lullaby" sometime to hear that brassy instrument turned into a soothing maternal melodist; listen to Jethro Tull sometime to hear the flute turned into a fire-breathing heavy metal instrument.
