The ability to think on his feet. The savvy to make hungry, uncomfortable people more prone to tolerance. And maybye get a smile out of 'em, in spite of their impatience. Good help really IS hard to find.

They should be clean, courteous and attentive.  Some look grimmy and never pay attention to the words coming out of the customer's mouth.

Subway as in ride the subway or subway as in sandwich?

I think the other answer has the right idea if it's Subway sandwiches...good attitude and clean hands.  You gotta be patient too because some people just don't know what they want on their footlong (so many choices).  On another note, it wouldn't hurt to have clean hands, good attitude and patience if you work on a subway too.
