What do u do with VEAL SWEETBREADS?

are they good, how do u fix them. got free from a food bank, told that they were veal thymus gland, and pancrease, is this correct.

Yeah, they are delicious.  I used to get them at an Argentinian restaurant.  I would normally get them grilled and season with lemon, cumin, and salt.  You could make a chimichurri .

Blanche them and saute with peppers, onions, garlic, stock, wine, peppercorns and salt. TT. Very good with a potato dish.
