  1. Calves, generally under the age of 4 months are called veal.

    Normally, cattle are slaughtered around 14 months of age, this is where most of our beef comes from. Based on quality, it is divided into Prime, Choice, Select, or Standard.

    When old cows are slaughtered, the meat is usually of a lower quality, called Cutter or Canner.

    old cow - tougher, some times fattier, beef

    calves (different from young cow) are veal.  Okay, calves raised in a particular way are veal.

    Young (around 1 year old) fattened calves are sometimes called baby beef, all young fattened beef is called prime beef, sometimes if grass fed it is called grass fed beef.

    Older cows are almost always used as ground beef or hamburger.
