  1. It is either a stone or a steel. Steels are round and have a handle. They are normally used for dressing up a sharpened blade.


  2. A stone, if it's flat.  Depends on your kitchen knives.  I have stones that are short and flat, long and flat, and cylindrical with a handle.  Some work better wet then dry.

  3. You should only use a steel to sharpen a kitchen knife a stone or grinder should only b used  when the blade is dead or chipped.
