    'a person who doesnt eat red meat'

    they still eat white meat, therefor not vegetarian.

    still eating chicken/white meat does not fall under any of these.

    & a pescetarian eats fish but no other meat.

    So you would still be a carnivor, just with red meat cut from your diet.
