  1. the Amuse Bouche (pronounced ah-mooz  boosh ) is a small plate given at the beginning of the meal...not between courses...it means to amuse the mouth..or to wake it up for the wonderful meal coming..it's sometimes served in chinese soup spoons and can be anything that is a small bite!!!

  2. Its called a sorbet...usually made of lemon and frozen or lime.

  3. intermezzo, it is usually a small scoop of srbet or a thin soup intened to clean thr pallet before the next cousre.

  4. ramekin

  5. The course is called the intermezzo, usually a small scoop of sorbet, which is has no cream. Sorbets are basically frozen, flavored sugary water  with fruit, wine or liquors. I have had sorbets flavored with passion fruit, pink champagne, and triple sec. The is an almost endless combination.

  6. ... but "intermezzo" is an italian word. I think that's the "trou normand".

"The mealtime trou normand, or Norman break, is a pause between meal courses in which diners partake of a glassful of calvados, and is still observed in many homes and restaurants (in Normandy)"

(and the "amuse BOUCHE" is not to clean the pallet ° )
