what are some things that you make for dinner that is quick and easy???

we are sick of the same old stuff every week. I nkow this has nothing to do with parenting, but i'm sure all you women and men cook dinner LOL

  1. Make easy things.  My mom always made a "surprise plate" with veggies, dip, pieces of bread to dip, cold cuts and sometimes a bit of chocolate.  You can also make trail mix (nuts, dried fruit, and white chocolate or yogurt (dried)) for snacks it's great.  For dinner you can make things on the weekend like lasagna, chili, shepard's pie and freeze them and then take em out and stick them in the oven.


  2. This one is easy and it has a LOT to do with parenting because it will give you more time with them.

    I put a whole chicken in the crockpot with some water 1/2 way.  I either put lemon pepper on top of the chicken or I put another spice on it.  It really depends on what flavors you like.

    I peel potatoes and put them around the chicken.  I put carrots in there too or string beans, whatever we have.

    I let it cook on high all day.

    By the time I get home from work we have a complete chicken dinner from the crockpot.

  3. I'm big on pasta dishes. Baked ziti takes about 15 minutes to prepare and cook and then put it in the oven for another 20 minutes on 350.

    You can add zucchini, green peppers, corn, a bit of sour cream, shredded Cheddar or mozz. cheese, red pepper... anything.

    My kids love simple dinners.

    Tonight they had shrimp, salad and fresh pineapple and strawberry chunks.

    They love baked chicken, corn on the cob and applesauce.

    This is their fave dish:

    pasta Taco salad-

    Cooked pasta, hamburger or soy crumbled cooked

    green peppers, lettuce, shredded cheddar cheese, tortilla chips, salsa, red peppers, ranch dressing, black beans

    Mix ranch dressing in the pasta. Layer it on bottom, top with meat and black beans, layer that with lettuce, green/red pepper, cheese- layer that with crumbled tortilla chips (about 3 or 4) and drop some salsa on top.

    They love the warm/cold combo of this!

    It takes about 30 minutes from start to finish.

  4. I love making what I call white trash enchiladas (i am not saying any one is white trash or that white people are trash. I am white.)

    You can go to the grocery store and buy McCormick's Enchilada mix. It's super easy and super fast.

    Or chili dogs are fun.

    Tacos

    Grilled cheese and tomato soup.

    I suggest that you thin of the foods that you had as a kid that you really loved and I bet your kids will love them

  5. The Fix it and Forget it Cookbook is the best thing I have ever owned. I pop all the ingredients in the pot in the morning and by dinner time it is ready.

  6. Stuffed chicken, cranberry chicken, apricot chicken etc. Chicken is really the only thing my kids eat.

    My suggestion would be to get a crock pot! Great invention, simple to use and you find a million recipes using it!

    Also try www.allrecipes.com and type in any of the ingredients you happen to have. You can find lots of different stuff on there.

    These are obviously retail places selling a service, but you can use the same principle at home.  What they do basically is you 'make' the entree dish by combining the ingredients with the meat and freezing it.  When you pull it out to cook, more or less they can be popped into the oven or cooked on the stove with lil time/effort.

    I have found that different meat marinades and things like that are best for this.  But, Dream Dinners has done things like lasagnas, and all sorts of things.

    If you dont have one of those stores in your area, I am sure you have something.  Because it is a retail store selling service, it is cheeper to do it yourself at home.  However, the prices really are not that bad.  If you have one near you, I would suggest going at least once to get the bigger idea of whats going on.

    Also, Dream Dinners has put out a couple books with some of their recipes and how to do it at home.

    4 tablespoons olive oil, plus more as needed

    2 large onions, thinly sliced

    1 teaspoon sugar

    Salt and freshly ground black pepper

    9 (8-inch-diameter) flour tortillas

    3 cups shredded Fontina

    3/4 cup jarred roasted red bell peppers, drained well and patted dry

    1/3 cup finely chopped fresh Italian parsley leaves, plus sprigs for garnish

    1/3 cup freshly shredded Parmesan, plus 3 tablespoons for garnish

    Heat 2 tablespoons oil in a heavy large skillet over medium-low heat. Add the onions and sugar, and cook until the onions are golden brown, about 20 minutes. Season the onions, to taste, with salt and pepper; set aside.

    Preheat the oven to 250 degrees F.

    Sprinkle some Fontina over half of a tortilla. Arrange some bell peppers and sauteed onions on top of the Fontina. Sprinkle with chopped parsley and Parmesan. Sprinkle more Fontina over. Fold the clean half over the filling to cover and press gently to seal. Repeat with remaining tortillas evenly dividing the filling ingredients.

    Heat 1 tablespoon oil on a heavy large griddle over medium heat. Working in batches, cook the quesadillas until the cheese melts and the tortillas are golden brown, adding more oil as needed, about 3 minutes per side. Transfer the quesadillas to baking sheets and keep them warm in the oven while cooking the remaining quesadillas.

    Sprinkle the remaining Parmesan over the quesadillas. Cut each quesadilla into 4 wedges. Arrange them on a platter. Garnish the platter with parsley sprigs and serve.

    Do-Ahead Tip: The quesadillas can be assembled up to 8 hours ahead. Arrange them on a baking sheet, cover tightly with plastic wrap, and refrigerate.

    Grilled Cheese & Soup

    Pasta Salad (you can add just about any veggie to it)

    Pork Tenderloin & Mashed taters (get a pre-marinated tenderloin)

    Taco Mess: make all the fixins plus assemble lettuce, hard tacos and soft tacos and everyone can fix their favorite: hard taco, taco salad or soft taco

    Chicken & Salsa: Place chicken thighs, jar of salsa, can of corn in pyrex dish and bake till chicken is cooked, serve with white rice.
