  1. It depends on what you want to cook with it. If it's only as the main dish, then I'd say Dehradun Basmati is one of the best. But if you want to make rice pudding or other desserts with it, then use Kalajira rice from Bangladesh. Some people like the reddish, parboiled Aman rice from West Bengal -- a great variety especially for true Indian lovers. Unlike Basmati, Jasmine or Tilda, the red parboiled rice does not make you bloated or too full.

Widely available Swad is pretty good...but I perfer to go to an independent Indian grocer and get my own out of Bulk food that you scoop and bag yourself...everything is better from an independent grocer and its better for the economy (Plus you can just get a tiny bit or a lot at a time)  And I think basmati has the best flavor when boiled from start to finish with a scant palmful of fresh cumin seeds (the whole seed not powder)

  3. My favs:  Tilda, Royal, Arora, Elephant, Swad.....as long as it is authentic Basmati rice, you are fine!  Use 2 cups of water/1 cup of rice.  I also recommend using a rice cooker, very easy and no baby sitting.

Basmati rice...Tilda is very good as mentioned before.  Do not use jasmine rice, it is not authentic for Indian food although it is also an aromatic rice.  Another reason not to use Jasmine rice at all is that it has a higher glycemic index than pure sugar (ie greater that 100 on the GI scale where 100 is sugar)!  Even if you are not a diabetic this still translates to a massive load of carbohydrate that your body will store as fat.  Basmati rice actually has a lower glycemic index than most other rice types so bonus!

    Ways to cook it (in case you need some tips):

    1) Always rinse the rice throughly until the water is clear.  How you do this is up to you but expect to use quite a lot of water.  This process removed starch dust from the grains which in turn will help prevent the rice grains from sticking together.  Basmati rice should always have separated grains when served.

    2) Soak the rice in clean water for at least half an hour.  This will lower the cooking time and prevent the rice grains from over cooking on the outside while still being hard in the center.

    2) Rice cooker (according to instructions), boil or steam until done.  Grains should be firm but not hard in the center, a bit chewy in fact.
