  1. Today I have eaten:

Breakfast: Two bananas...(I wait until I'm hungry to eat in the morning and only eat raw fruit a little bit at a time)

Lunch: A big piece of vegetable pot pie (homemade leftovers: http://vegweb.com/index.php?topic=6863.0... and a small handful of edamame

Snack: Apple, cucumber, celery juice (1 apple, half a fat cucumber, 1 stalk celery) and a whole stalk of celery with a line of peanut butter down it.

Dinner: Probably rice and bean burritos and salad

Maybe some raspberry sorbet for dessert?  Or a blueberry muffin

Today I only had to work until noon, usually I eat salad, soup or a peanut butter and jelly sandwich for lunch.  With chips, carrots, raisins, or something.

I also eat a lot of cereal for dinner (with soy milk), or frozen waffles....I'm in college

  2. Breakfast: Cereal with soymilk, toast & fruit. Tea!

Lunch: Sandwiches, fruits, raw veggies like cucumber, carrots, cabbage.

Dinner: Chinese stir-fries with rice, fajitas, roast veggies, pasta with scratch sauce, veggie sushi, soups & stews, curries. Veggieburgers with corn on the cob or oven-baked fries. Veggiedogs. Grilled mushrooms & seitan with black bean sauce.

Snacks: Popcorn. Nuts. Dried fruit. Rice Dream. Banana bread. Potato chips.

  3. breakfast-granola bar and banana

lunch-pb&j, some cauliflower, and an apple

dinner-tortilla with beans w/ veggies on top

    snack- carrots

  4. Today I had:

BREAKFAST - homemade vegan waffles and apple juice

LUNCH - salad with vegan dressing, 2 mini baked potatos with soy margarine and a side of baked beans

DINNER - pasta with red sauce

DESERT - either chocolate soy icecream or a piece of vegan cake.

Yum, yum, yum! Eating vegan is delicious and not nearly as hard as people think it is :D

  5. breakfast:   steamed spinach, oj, soymilk, banana, soy bacon and soy sausage with strawberries and a avocado.

lunch:   corn, broccoli, avocado with soy chicken sammich.   water,  cranberry juice.

dinner:    soy burger with peanut butter, strawberry, blueberry, kale, spinach, avocado, banana sammich with steamed asparagus, steamed peppers,  artichoke with soymilk and water.

    snack,   apple and carrots.

  6. Breakfast-Cereal or oatmeal with soy milk, and a piece of fruit.

Lunch-Salad or a sandwich usually. Fruit.

Dinner-I eat stir fry a lot! Bean burritos, spaghetti, etc.

Just vegan versions of normal dinner foods.

Snacks- Tons of fruits and veggies, popcorn, nuts.

Dessert- Soy ice cream, soy pudding, otter pops.

  7. Well, today was far from exemplary, but:

    Breakfast - oatmeal, blackberries, coffee

Lunch - sandwich (sprouted grain bread, avocado, bean sprouts)

Snack - bananas with peanut butter (my toddler and I share snacks out of convenience, haha)

Dinner - Whole grain pasta, a really veggie-rich tomato sauce (with tons of spinach, basil, garlic, onion, mushrooms, zucchini and other greens), and "meat"balls that were more falafel-like, I make myself out of whatever veggies available, this time it included breadcrumbs, onions, mushrooms etc.

Dessert - This really rich vegan flourless chocolate cake, it's insanely fudgey and chocolatey... and I feel awesome now.

I'm probably going to have some more fruit before bed because if I don't eat the mangoes they'll start to go bad and become overripe...
